Marshmellow Pudding

This is how the final product of pudding looked like:

Here I have used my microwave for cooking. I have also mentioned how to prepare this pudding using stove

Ingredients:

Milk - 1/2 litre (2.5 Cups)
Sugar - 12tsp
Vanilla Essence - 4 tbsp
yellow Colour - 2 pinches
Egg white - 2
Gelatin - 4 tsp
water - 1/2 cup

Method:
- Boil the milk in the microwave on high for 2 minutes.
- Add the yellow colour and sugar.
- Mix well until the sugar disspolves.
- Put it back in the microwave and heat it in high for 2 minutes.
- seperate the egg whites and beat them until they form a foam. It should have a foamy texture.
- Take water and heat it in microwave for 1 minute in high.
- add the gelatin and mix well until it dissolves.
- Now add the gelatin and mix well to the milk mixture.
- Now add the vanilla essence and mix well
- now add the beaten egg to the milk mixture and fold it twice or thrice.
- Now leave it in the freezer for 1 Hour.
- Then remove from freezer and leave it in the fridge.


Optional:

- Finely chopped nuts and raisons fried in ghee can be added to the milk mixture after the egg mixture is added.
- Tutty Frooty can be also be added
- Chopped fruits can be added to the mix mixture after adding the egg.

Thanks to SUSI chithy. She is my mom's younger sister from Trichy. I spoke to her today morning asking for a recipe over the phone. I had a gelatin packet for a very long time and didnt have any clue about what to prepare. So i called her today and this recipe was given to me by her.
You can see the froth of egg mixture in the first picture. In the second one you can notice that the froth has formed a thick layer above the pudding.

This is really a tempting dessert. Can be prepared in few minutes and can be served after ts set ( approx. 1 hr's time).

 



Besan Ka Ladoo made using Microwave

Ingredients:
2.5 cups besan
2.5 cups powdered sugar
1 cup melted ghee
1/4 cup chopped almonds (badams)
1tsp cardamom powder
water - little

Method:
- add besan powder in a microwave oven.
- add 1/2 a cup of ghee
- sprinkle water on it and make it into a mixture
- the mixture would look like bread crumbs
- microwave on high for 6 minutes
- stir in between every 2 mins
- remove from oven and break the lumps
-leave it to cool
- mix sugar and cardamom powder and mix well
- grind  this mixture in a mixer grinder until its a smooth powder.
- add the almonds / badams
- add the remaining ghee and mix well
- now this mixture will look like bread crumbs
- now make them into ladoos




Kaju katli using Microwave

Ingredients:
2 cups + 1/4 cup  - cashew powdr
1.5 cups - Powdered sugar
1 cup - khova (sweetless)
3tbsp - milk
1/4 tsp - cardamom powder

Method:
- In a microwave bowl add sugar, 2 cups of cashew powder, khova and milk and mix well without any lumps
- microwave on high for 4 minutes.
- stir in between everyone minute.
- remove from oven
- add cardamom powder.
- and mix well until it forms a thick mixture.
- If the mixture is loose then add the extra cashew powder.
- the exact consistancy wil look like a chappathi dough.
- Now grease ghee on a chappathi rolling plate
- Now roll it into 1" chappathi and cut it into squares.


Serve


 




Moong Halwa made in microwave

Ingredients:
Moong dal - 1/2 cup
milk - 1 + 1/4 cup
khova (sweetless) - 1/4 cup
sugar - 1 cup
ghee - 1/4 cup
Nuts (chopped) -1/4 cup
cardamom powder - 1 tsp
saffron - 2 pinches.

Method:
- soak moong dal in water for 4 - 5 hours.
- remove water from dal and cook in microwave oven on h igh for 5 mins
- allow it to cool
- Grind the dal into a coarse powder.
- mix half of the ghee.
- cook for 5 mins in high
- then remove from the oven
- add the remaining ghee to the pan and fry the dal mixture.
- fry till  they turn golden brown.
- transfer the contents to the microwave bowl
- mix khova and milk to the mixture.
- cook on microwave for 3 - 4 minutes on high
- add sugar to this
- cover this bowl and microwave for 5 - 6 mins
- add the nuts, saffron and cardamom powder.
- mix well
- Halwa is ready to serve.



Vegetable Briyani

Ingredients:

Basmathi rice - 2 cups (long grained rice)
water - 3.5 cups
Capsicum -1/4 cup
beans- 1/4 cup
cauliflower - 1/4 cup
peas - 1/4 cup
carrot- 1/4 cup
small potatoes -  1/4 cup
Ghee - 2 tbsp
salt to taste
Cashew - 2tbsp
corriander leaves - 2 tbsp
mint leaves - 2 tbsp
cardamom powder - 1/4 tsp
saffron - 2 pinches
milk - 1 tbsp
onion - 2 cup (chopped and dried for sometime)
oil - 3 tbsp
cashew nuts - 3 tbsp

For marination:
yogurt (curd) - 1 cup
onions - 2 cup (chopped)
salt to taste
chilli powder - 1.5 tsp
garam masala - 1/2 tsp
jeera powder -1/4 tsp
ginger and garlic paste. 1.5  tsp
turmeric powder - 1 tsp
dania powder- 1 tsp
corriander leaves- 2 tbsp (finely chopped)
mint leaves - 2 tbsp (finely chopped)
oil

Tadka:
Ghee - 2 tbsp
cardamom - 1
cinammon - 1/2"
bay leaf - 1/2"
cloves - 2
saunf - 1tsp


Method:
Method for tadka :
- take a pan
- add ghee and the remaining ingredients for tadka and set it aside.

Marination Method:
- grease the bowl with oil.
- add the chopped onions and microwave for 7 mins on high
- it would look brown in colour.
- set it aside to cool
- now make a fine paste using water.
- Now add yogurt, salt to taste, chilli powder, garam masala powder,turmeric powder, jeera powder, dania powder, ginger - garlic paste, corriander leaves, mint leaves.

Method making the Briyani:
- wash and soak the rice for 30 minutes.
- soak saffron strands in milk and leave it aside for few minutes
- mix the marination paste to the vegetables and soak for 1 hour.
- add 1 tbsp of oil to the choppped onions.
- microwave on high for 2 - 3 mins
- stir in between every thirty seconds.
- add 1 tsp of oil to cashew nuts in a bowl
- microwave on high for 1 - 2 mins
- stir in between fr every thirty seconds.
- Now take the soaked rice.
- add ghee to that and add salt to taste
- mix well
- close and microwave on igh for 12 mins
- remove from oven after 5 mins standing time.
- spread the rice on a plate and divide the rice into two portions.
- to one portion of the rice add the tadka
- to anothe portion of rice add the soaked saffron.
- take a big vessel
- take spread of the ghee
- now add half quantity of the tadka rice.
- add half quantity of the marinated vegetables.
- add remaining of the tadka rice
- add ghee on top
- add chopped corriander leaves
- add mint leaves
- add half quantity of the fried onions on top
- add half od fried cashew nuts
- now add half quantity of saffron rice
- add the remaining vegetables which are marinated
- add the remaining saffron rice and the leaves'
- then add the remaing fried onions and the fried cashews on top
- add cardamom powder
- sprinkle some water
- microwave on medium for 30 mins
- after 10 minutes of standing time remove from oven
- add the ghee on top
- serve hot.


Vegetable Pulao in Microwave

Ingredients:
Rice - 1 cup
Water - 2 cups
salt - 1 tsp
Carrot - 1
cauliflower -1/4 cup
potato - 1
capsicum - 1
peas - 1/4 cup
cardamom - 2
cloves - 2
green chillies - 10 - 12
cinnamon - 1/2"
bay leaf - 1/2"
saunf - 1/2 tsp


Method:
- wash rice and soak rice in water for 30 mins.
- mix all vegetables with soaked rice and microwave for 5 mins in high and 15 mins on low power.
- remove from oven after 10 mins of standing time
- mix ghee, cardamom, saunf,cloves, cinnamon and bay leaf to the cooked rice and mix well
- microwave for 3 mins.
- remove from the oven after the standing time of 5 mins.
- Serve hot.



Dokla made using microwave

Ingredients:

Besan powder (gram flour) - 1 cup
Rava (sooji) - 1tsp
sugar - 1 tsp
salt - 1/2 tsp
turmeric powder - 1/2 pinch
water - 1 & 1/2cup
citic acid - 1/2 tsp
Baking soda - 1/4 tsp
mustard seeds - 1 tsp
oil - 2 tsp
curry leaves - 10
corriander leaves - 2 tsp

Method:

- grease a microwave plastic mould with oil
- mix besan powder, rava, salt, sugar and turmeric
- add 1 cup of water to the mixture.
- beat it well until it is disolved
- Now dissolve citric acid in 1/2 a cup of water and mix in this mixture.
- Add soda to the mixture.
- mix well until this forms a idli batter consistancy.
- Now microwave this mixture for 3 mins in high.
- remove this mixtiure from oven after 5 mins of standing time.
- cut the mixture into small squares.
- in a pan add oil.
- when the oil is hot add the mustard and curry leaves and fry.
- add the doklas peices and fry. Toss this over and serve hot with pudina chutney.

Note:
- you can substitue the citric acid with a juice of half lemon.


- you can also prepare the same dokla without microwave. The above ingredients and the procedure are the same. Pour this mixture in a bowl and bake it in a pressure pan without whistle for 5 - 7 mins. Cut them into squares and the rest of the procedure is the same as above.


Karaji (Somas) made in Microwave

For filling:
1 cup -  grated coconut
1/2 cup - powdered sugar
1/4 tsp - cardamom powder

For Dough:
6 tbsp - maida
1 tsp - cornflour
1/2 cup milk
2  tbsp ghee


Method:

For the filling:
- Mix sugar and coconut to a bowl and microwave for 5 mins high.
- this will become like bread crumbs
- add cardamom to this and mix well.

For making the dough:
- Mix ghee and cornflour and make it into paste.
- to this add the maida and mix well.
- this mixture should look like bread crumbs.
- add milk to this by every spoon and make a dough.
- the dough should be very similar to a chappathi dough.

For Karaji:
- make small balls from the dough
- and roll out into tiny chappathi's by dusting with maida powder.
- on this place the filing in the middle.
- do not place mroe of the filling and you will not be able to close the karaji.
- grease the sides of the chappthi with milk.
- just fold the chappathi into half where the filling is in the middle.
- leave this in the fridge for 1 hr
- Then microwave for 7 mins in high.


Carrot Halwa using Microwave

Ingredients:

1/2 kg - carrot
1 cup - powdered Sugar
1/4 Cup + 3 tbsp - ghee
Cardamom powder - 1/2 tsp
condensed milk - 3 tbsp
Cashews - 2tbsp
almonds (badam) - 2 tbsp

Method:
- preheat microwave oven for 5 mins in High
- Wash and peel the carrot and Leave it in a bowl.
- sprinkle water on the carrot and microwave on high for 6 mins
- Now when the carrot is tender grate it.
- To the grated carrot add the powdered sugar, 1/4 cup ghee and condensed milk and mix well.
- Now microwave for 5 mins in High
- Now Take cashew nuts and almond. Mix 2 tbsp of ghee to it and micro wave for 3 mins in High, stirring in between for every one minute.
- Now add the nuts and cardamom powder to the halwa and serve.

Note:
- This is a easy method of making carrot halwa if some sweet has to be prepared in a short span of time.
- The taste will be the same as the original carrot halwa.
